Eggplant Curry Dip

on Aug 23, 2014

We got tons of eggplant in this lot of farm share. Eggplants always remind me of my grandma’s dinner table stories. My grandma used to tell us these fun food stories. In her stories, eggplant used to be the king of the vegetable kingdom. Story went something like this. Long time ago when there was a drought in the kingdom, all the vegetables were worried that they won’t be able to support their families without the essential element – H2O. So, every vegetable family sent their representative to the capital to speak to the king and request to come up with some solutions for this dire situation. King had a smart group of ministers, all brainstormed and came up with the idea that they should seek help from the most evolved species of this planet – humans. Finally human and vegetable kingdom together came up with a solution. The solution was to channelize water from...

Kohlrabi-Lentil soup

on Jun 24, 2014

Every week farm share brings variety of greens and veggies to my fridge. I am excited and curious at the same time. Excited because I will be feeding my family with so many goodies, curious because I want to bring variety in terms of recipe to the table. This week we got kohlrabi, bunch of greens and sage. So, I decided to fuse a bit of east with the west by combining commonly used lentils in Indian cooking with my farm share veggies. I get my proteins and essential vitamins and minerals in one shot. For carbs, I pair it up with rice or roti/chapati (Indian wheat tortilla) or multigrain breads. We have been out of gas for past 3 months now so I have been doing all my cooking on this little electric stove. Cooking time on this electric stove is humongous. So these days, I jumble all my veggies and lentils in one dish and either make soup/stew/sauce out of it in a pressure cooker. While...

Guacamole

on Jun 22, 2014

Wishing you all a very happy 2014. I hope we all try this year to eat healthy and to maintain balance in our lives. With that mission in my mind, I am kick starting this new year with one of my all time favorite recipes “Guacamole (aka Guac ) “. I adore avocados. It is one such fruit that passes with flying colors on both the tests – nutritional value and yumminess :). Guacamole is perfect for those lazy days when we do not want to do a lot to get nice home cooked meals- especially after holiday season. Use “Guac” as spread, eat as snack, do whatever you like. Its healthy and tummy loves the yummy delight. There are million different ways you could prepare this dish. I am sharing my version. I enjoy making and eating it. I hope you like it as well. Ingredients: Haas Avocado (medium size) -1 Roma Tomato (medium size) -1/4- finely chopped Red onion (medium...

Ginger tea (Adrak chai)

on Jun 21, 2014

Happy Mother’s day!!! I salute to all the mothers who are working so hard on a daily basis for their families. I read somewhere that Mothers epitomize selfless love and I completely agree with that. I want to take this opportunity to wish my mom a very happy mother’s day and want to thank her for everything. Words are not enough to pay her the gratitude that she actually deserves but just want to say “I love you”. For my family, if I am able to do even 50% of what you did for us ….I will be very content. I also want to give my hugs and kisses to my friends Bindu and Rohini for being such great mothers. Akshaya and Sahana are two very lucky girls. Love you guys. I dedicate this recipe to all the wonderful mommies around the world. Ginger Chai (Tea) My mornings start with tea.  I am so glad it does, I immediately feel at peace while sipping it. It is very simple to prepare...

Asparagus-Red pepper-Potato curry

on Jun 17, 2014

Happy Fathers day! Love and patience that is what comes to my mind when I think of my dad.  This dish is dedicated to him, who has been there for us like a strong foundation. Thanks dad for everything. I  recently started my vegetable farm share. I was so excited about the farm share that I even took pictures and made a photolog about it. Thats me – “the crazy”. While growing up in India, mom tells me that there was never a thought process involved trying to include veggies in diet.  It was and is a default case that every meal would have one-two veggies, one lentil based sauce (daal), rice and roti (wheat bread). Now-a-days with busy lifestyle, we eat whatever is convenient and quick. But things are changing and services like farm share is again making it possible to go back to basics. Every meal has a variety of veggies. I got loads of greens in my...

Mango-Asparagus sandwich

on Jun 1, 2014

Last week was our wedding anniversary. I don’t know how time flew by.  Best part is that we hold hands as we watch life unfold in front of our eyes. Sometime life changed us, some other times we changed life. Overall, all is well. I am sure everybody has come across those moments in their lives when just words are not enough to describe the feelings. I do get overwhelmed on days like these. Overwhelmed by love…of course. I thank God/super power whatever you want to call it… for everything in my life. There is nothing much to say, I just wish us a life that is filled with love and health.   I also pray that we could spread the same wealth of positivity that life has bestowed on us through our dear ones. On this special day – 6 years ago, we promised each other to have simple but significant lives together. We would support each other and our loved ones to move forward in right...
